15 Tasty Ways to Enjoy Leftover Ham

Oh, ham, how I love thee. 💖

We eat the traditional foods on holidays over here. At Easter, dinner is ham and scalloped potatoes. I just love this meal! We usually add in green beans, rolls, and last year I did a tropical fruit salad, too. Sometimes we change up the sides a little bit, and I have been honing my scalloped potato recipe over the past five years. I'll share that in a future blog post!


But the ham? It's non-negotiable.

I'm a big fan of making too much food on holidays. Easter cooking is a lot of work, and I want to be able to eat for at least a couple of days from all those hours in the kitchen! So I get a big, big ham.

This year, with the quarantine, I didn't have to go quite so big since it's just my husband, my daughter, and I (and she doesn't eat ham... silly child). But we'll still have plenty of leftovers, and I went searching for some delicious and different ways to use them.

By the way: if your family doesn't want to eat lots of days of leftover ham... just add in one or two recipes per week when you're doing your meal planning. Dice up the leftover ham and portion it into quart size ziploc bags and throw it in the freezer! Super simple to pull out when it's on the menu that evening.

This delish Breakfast Strata Recipe from Lil Luna would be great for breakfast OR for dinner. We are big fans of breakfast for dinner at our house! And I love stratas because they are so easy to put together. You can even do it the night before. (Also, slightly stale leftover rolls work great in strata recipes).

Being a homeschool mom means that the middle of the day is usually busy. I like simple lunches that are tasty and these Homemade Ham & Cheese Pockets from Sally's Baking Addiction totally fit the bill.

Oh, Averie Cooks, you had me at Hawaiian rolls. Don't these Ham and Cheese Sliders make your mouth water?

We didn't eat a lot of beans while I was growing up, so I'm pretty inexperienced cooking with them. This Cajun Ham & Beans recipe from South Your Mouth looks yummy... and uses the same 15-bean mix from the crock pot soup recipe above. They must be good if all these talented cooks are using them, right?

I've had tuna salad, and chicken salad. But ham salad? That's a new one! But I'm loving the idea of Ham Salad from The Kitchen is My Playground. I'm a recipe tweaker, so I'll probably add a squirt of mustard and leave out the relish (yes, I'm a bit picky).

Here's another thing I've never tried: au gratin potatoes in the slow cooker. I always bake them in the oven. But, we always finish my scalloped potato leftovers before the ham runs out, so I'm looking forward to giving Slow Cooker Potatoes Au Gratin and Ham from Fav Family Recipes a try.

Did I mention I love cheese? Yeah. Bring on the Cheesy Ham and Broccoli Frittata from I Heart Naptime. Breakfast? Lunch? Dinner? Yes.

Cold, rainy days happen a lot in spring in the pacific northwest. This Smokey Ham, Potato, and Corn Chowder from First Home Love Life will hit the spot when the rain is falling and the skies are grey. I love thick, creamy chowders! I'll probably use my favorite white corn - though it won't look nearly as photogenic.

Here's another "I never thought of doing that" recipe! Ham Noodle Soup from Tastes of Lizzy T has potatoes and noodles, together! (Mind. Blown.) And marjoram! I haven't used marjoram a lot in cooking. I'll probably leave out the peas - they aren't my favorite - and make them in the air fryer instead and let my husband mix them in (he loves them).
