Mmmmmmm. Breakfast for dinner.

You know those nights when you're SO tired that cooking dinner might as well be climbing a mountain? No?

Just me?

Well. OK. Moving on.

This easy breakfast casserole recipe is just the thing when you need something simple and tasty! Even better, you can easily change up the ingredients to delight your own tastebuds. Love peppers and onions? Add 'em in. Bacon and melty cheese more your style? Go for it.


I almost always have ham slices and cheese in the fridge... the husband makes low-carb omelets for breakfast just about every day. So my go-to breakfast casserole is ham and cheddar. I get my hash brown patties from Trader Joes. (I also get the most delicious Earl Grey tea there, and Earl Grey pairs nicely with breakfast food. In case you're so inclined.)

The process for making this breakfast casserole with hashbrowns couldn't be easier. Spray an 8x8 baking dish with cooking spray, and layer in the hash brown patties.


Put your meat or or veggies (or both!) on top.


Then add the cheese! Mmmmmm... cheese.


Then pour over the eggs, beaten with the seasonings and milk.


And throw it in the oven! Voila! Simple dinner. I love pairing this with freshly sliced fruit and biscuits or toast.


Easy Breakfast Casserole Recipe


5-6 hash brown potato patties
6 eggs, beaten
1 cup milk
salt and pepper to taste
1 cup chopped, cooked ham (or bacon, or sausage)
1 cup shredded cheddar

In a medium bowl. beat the eggs and milk until frothy with the salt and pepper.

Spray an 8x8 baking dish with nonstick spray (I like coconut oil spray). Line the bottom of the pan with hash brown patties. Cut pieces to fit as necessary.

Salt and pepper the hash browns. Layer chopped ham over the potatoes, and 3/4 of the shredded cheese over the ham. Pour the egg mixture over all, and sprinkle remaining cheese on top.

Bake in a 350 degree oven for 50 minutes, or until nicely browned and a toothpick inserted in the center comes out clean.
